It is a cold and rainy day here in central Pennsylvania. Time for some PA Dutch cooking! You’ll notice, my title says chicken pie in crock pot; not chicken pot pie…there’s a difference!
Chicken pie is a scrumptious and savory meat pie…usually with actual pie crust but I was feeling like trying something a bit different than rolling out my never fail pie crust today. Instead, I pulled out a slow cooker and decided to try my hand at making chicken pie in crock pot instead. Although, full disclaimer, I no longer own an actual crock pot so I’m using the Instant Pot slow cook feature instead.

As I mentioned, chicken pie would traditionally be baked like a pie with crust on top and bottom. In place of that, I’m going to try a drop biscuit recipe that I will add to the slow cooker for the last stretch of cook time. The chicken I’m using has already been cooked so I reduced cooking time from 4 hours to 3 hours on high and keep everything else the same. Lately, all of the chicken I use for our meals at home comes from whole birds that I purchase frozen from a local pasture raised/grass fed market. Since separating the meat from the bones is decidedly easier to do after the chicken is cooked, I pretty much always have chicken already cooked and ready to use.

The longer I prepare meals for my family on a regular basis, the more willing I am to attempt substitutions in recipes or to simple try something new and see how it goes. The truth is, not every meal is going to be a winner but if you’re not willing to experiment a little bit, many meals will end up being nothing but mediocre….or spaghetti and tacos will make their way on the menu several nights a week when you suddenly realize you’re missing an ingredient for your planned meal.
Sometimes, I don’t even mention the substitutions I’m making. Trust me, it is often better that way. My husband won’t complain about a substitution so much but if I’m cooking something my children expect to enjoy, and suddenly they here that something has been modified or substituted…they may convince themselves that they don’t like it before it even approaches their mouths.
Tonight’s chicken pie in crock pot will be no different. Last night’s mashed potatoes used up the last of our white potatoes but I had just a few sweet potatoes to use up. Substituted.
My pantry is fresh out of cream of chicken soup but I have some cream of chicken and mushroom. Substituted.
Just make the swap and move on momma.

I’m glad you asked. It isn’t but I’m considering trying that next. I imagine the ingredients will very nearly mirror those of this recipe but cooking methods would be different. how is chicken pie in crock pot different than chicken pot pie?
Well, if you were to go into a PA Dutch Market and ask for chicken pie, you would be handed a double crust pie with a delicious meat, vegetable, and gravy filling. If you asked for chicken pot pie from that same PA Dutch Market, you would find yourself holding a bowl of chicken and noodles in a white gravy.
Both Chicken Pie and Chicken pot pie are delicious favorites of Pennsylvania Dutch cooking but they are clearly different meals. Simply put, chicken pot pie is cooked in a pot. There is no pie crust to speak of but noodles (homemade is best) throughout the dish instead.
Don’t even get me started on ham pot pie! Hahahahahaha

how to make chicken pie in crock pot
You’ll want to first check your fridge, freezer, and pantry for the needed ingredients.
1 large onion – diced
1 large russet potato – peeled and diced
3 cups chopped cooked chicken (or about 3 skinless boneless breasts)
2 cans cream of chicken soup
1 cup chicken broth
1 Tbsp dried parsley
½ tsp poultry seasoning
Black pepper to taste
3 cups frozen mixed vegetables – defrosted Your favorite biscuit recipe
instructions for making chicken pie in crock pot
- Place diced onion, diced potato, and 3 cups diced chicken in the slow cooker
- In a medium bowl, combine 2 cans cream of chicken soup, chicken broth, and seasonings. Stir mixture into pot and cook on high 4 hours or low for 7 hours
- Add 3 cups of mixed vegetables and cook for 1 hour more.
- If trying drop biscuits, have your mix ready and drop it by the spoonful on top of chicken pie mixture to cook for the remaining hour. If making biscuits separately, do that during last hour of cooking.
- All done, spoon into bowls with a biscuit and enjoy!

what biscuit is best to pair with chicken pie?
Well, the choice is obviously yours but I won’t be shy in saying homemade is always going to be better than what you would buy in a tube at the store. Spare yourself and your family all of those dangerous hydrogenated oils. Besides, homemade biscuits really aren’t that challenging, especially if you opt for a drop biscuit. Then you don’t even need to roll them out!
I recently made an Einkorn Buttermilk Biscuit that I thoroughly enjoyed with some creamed chipped beef. But, any classic biscuit recipe will do just fine as well.
